La Ferme de Sato ("Sato Farm") are the range of wines from Yoshiaki and Kyoko Sato's very own vineyard. Here these vines have been tended to all year by Yoshiaki and Kyoko and made on-site too in their winery which is located at the top of their hillside vineyard.
Vineyard: Sato Pisa Vineyard
Soil: Alluvial sandy or silt loam with schist & quartz gravel
Viticulture: No pesticides, herbicides, system fungicides or inorganic fertilisers used
Harvest: Hand picked. 1 May 2020. 26 hl/ha.
Vinification: Natural yeast fermentation. All destemmed. 23 days on skins. No additives except for 15 mg/L sulphites added before bottling.
Maturation: 17 months in old French oak barrels.
Bottling: 28 November 2021 without fining or filtation. 876 bottles produced.
Due to the volume produced, the Cabernet Franc was bottled under cork and wax on site at their winery. All else under screwcap.
