93/100 - Wine Enthusiast
93/100 - Bob Campbell MW
5 stars - Michael Cooper (2016 vintage)

"Unsurprisingly, knowing the Herzog's penchant for unique varieties, and artisan, European-style winemaking, the wine bottled from the region's most famed grape is hardly recognizable, so vastly different is its style. Butterscotch colored, it is rich and opulent, thanks to time spent on the lees, but with freshness and vibrancy. Honey, tangerine, lemon curd, fresh hay, underlying mineral, floral and herbal notes can all be found. Drink now-2030.” - Christina Pickard, Wine Enthusiast

"Rich, complex wine with nutty oak, ginger, brioche and yeasty lees dominating ripe sauvignon blanc characters. A weighty, textural wine that is showing the benefit of a little bottle-age, but clearly has more development potential ahead.” - Bob Campbell MW

Tasting Note:

A refined, refreshing and cumbersome palate, beautifully lifted aromatics with a dance of dried flowers, light white peach, and a touch of exotic fruits. The dry and full bodied palate evolves into uplifting citrus notes, leaving a refreshing but weighted mouth with great vigour and persistence from start to finish. A harmonious expression of Sauvignon Blanc, reminiscent of a truly mouth-watering graves with class and composure.

Winemaking Notes:

Such purity in the fruit allowed for an extended cold maceration to extract the wonderful flavours. After gentle pressing the must was transferred into 500 lt French oak puncheons (30% new) where the wild yeast fermentation naturally started. The wine was then left on the lees with regular stirring to provide silkiness, complexity and depth and had time to mature over 15 months before we bottled this nectar. This wine is not cold stabilized and is unfined with only light filtration to retain the beautiful aromas with a low sulpur addition. Natural sediments may show but do not impact on the high quality of this natural wine.
